Who is Ashton?
Ashton is a butcher from Calgary, Alberta, Canada. While working in a deli as a teenager, he developed a strong interest in deli meats and meat processing. This curiosity quickly grew into a passion as he learned more about how meat was prepared. Then, when COVID-19 hit, meat departments struggled to keep up with demand, further fueling Ashton’s drive to enter the industry.
Seeing an opportunity, Ashton jumped into butchery with both feet, embracing the craft and developing a deep-rooted love for all things meat cutting and processing. Over the past few years, he has studied and worked countless hours to master butchery, always striving to learn and share his knowledge with others.
Some of Ashton’s milestones include:
✅ Graduating from the Southern Alberta Institute of Technology as an honor roll student
✅ Working with butchers around the world, including those from Australia and beyond
✅ Gaining hands-on experience with a wide variety of butchery techniques and skills
Now, Ashton is on a mission to help home butchers and meat lovers learn more about their meat, save money, and get the best value from every cut.
Why Butcher Insider?
I created Butcher Insider to be the ultimate resource for home butchers, meat lovers, and anyone looking to get more value from their meat.
As a butcher, I’ve seen firsthand how small changes in the way you buy, cut, and store meat can save you a ton of money. But most people never learn these skills—and that’s where this blog comes in.
I want Butcher Insider to be more than just a blog—I want it to be a community for people who care about quality meat and getting the most from every cut. – Ashton Wilson
